A couple weekends ago, we finally got around to apple picking, and it was as glorious as every other year. Joe and I frolicked around the trees, we took some fun photos, and ate our bodyweight in apples before we even left.
Since we brought our apple haul home, I’ve been baking alllll the apple goodies I can think of. I’ve made this bomb caramel apple baked oatmeal several times, which is so perfect for a cozy fall breakfast. But if I’m being honest, I’m not typically huge on apples in desserts. I guess that explains why the apple recipes are few and far between on the blog. Good news though, I do have a raw apple dessert coming soon that I am SO excited to share! Anyway, I’ll stay focused on what we’ve got today, which is some sweet little vegan apple pie breakfast cookies.
While apples aren’t my first choice for dessert, I am all about using them at breakfast. Especially in the fall when they’re so sweet abundant, they’re practically begging to be used. These cookies are a great make ahead option, for you meal prep babes! It’s a really easy, fast recipe that you could bake on a Sunday to have a sweet, healthy breakfast or snack treat ready to go for the busiest fall week!
Ingredients for vegan apple pie breakfast cookies
- Rolled oats: I always use old fashioned rolled oats for the best texture. You’ll blend some into flour to hold the cookies together, and leave some whole for great chewy texture.
- Cinnamon: cinnamon is the perfect pair with apple.
- Ground flaxseed: flax adds great nutrition and omega-3 fats.
- Medjool dates: you’ll blend the dates with hot water to make a paste, which sweetens the cookies naturally.
- Applesauce: unsweetened applesauce helps give the cookies a moist, soft texture.
- Vanilla extract: a little vanilla helps to flavor the cookies.
- Apple: diced apple gives lots of flavor and great texture.
Tips for making vegan apple pie breakfast cookies
- Have fun with the mix-ins. Feel free to add some nuts or raisins before baking if you’d like – just take out some apple and swap in whatever other ingredient you use. So for example, use 3/4 cup diced apple if you want to add 1/4 cup raisins or nuts.
- Let the cookies cool after baking. Let the cookies cool and firm up for at least 10 minutes after baking before carefully removing them from the pan.

Vegan Apple Pie Breakfast Cookies
Ingredients
- 1 cup rolled oats, blended into flour
- 2 cups rolled oats
- 1 tbsp cinnamon
- 2 flax eggs – 2 tbsp ground flaxseed in a small bowl with 6 tbsp water, set in the fridge for 15 minutes
- 1/2 cup date paste – 8 medjool dates blended with 1/2 cup hot water
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 cup diced apple
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mix the oat flour, whole oats, and cinnamon.
- Add the flax eggs and, date paste, applesauce, and vanilla extract, and mix until thoroughly combined.
- Add the diced apple and mix until everything is thoroughly combined.
- Portion about 1/4 cup of dough into 12 rounds on a nonstick or parchment-lined cookie sheet.
- Bake the cookies for 20 minutes, then let them cool on the sheet for at least 10 minutes before removing.
- Store leftovers in the refrigerator.
