I’m pretty sure that not only do I have a strong “sweet tooth,” but that all of my teeth are sweet. As a result, sometimes I randomly crave a really specific dessert. A few weeks ago, it was chocolate chip cookies. That craving led to one of my favorite recipes ever, these classic vegan chocolate chip cookies.
But sometimes, I don’t want a whole batch of cookies lying around. So, here we have a SINGLE SERVING chocolate chip cookie. All the flavor, ooey gooey texture, and of course, chocolate chips, without a whole batch of cookies to give away or resist eating in one sitting.
This vegan single serving chocolate chip cookie is based on my recipe for classic chocolate chip cookies. We’ll use those same ingredients, just scaled down a bit.
Ingredients for a vegan single serving chocolate chip cookie
- Almond flour: almond flour keeps the cookie really soft and gives a great chewy texture.
- Date sugar: date sugar is simply dried dates that have been ground up, and it gives the cookie natural sweetness all from fruit.
- Applesauce: unsweetened applesauce helps the cookie maintain a soft, moist texture.
- Vanilla extract: vanilla helps flavor the cookie dough.
- Vegan chocolate chips: I like the PASCHA unsweetened or Lily’s stevia-sweetened chips, but use any vegan chocolate chips you like.
Tips for making a vegan single serving chocolate chip cookie
- Mix the dry ingredients first. Depending on the almond flour and date sugar you use, there may be lumps to work out with a fork before mixing in the other ingredients to make sure everything in the cookie dough is incorporated.
- Let the cookies cool on the sheet after baking. This cookie is amazing straight out of the oven, but be sure to let it cool for at least 10 minutes on the sheet after baking so that it doesn’t fall apart when you move it.
As someone who bakes multiple batches of sweets every week, I am SO excited to have this recipe. This vegan single serving chocolate chip cookie couldn’t be easier to mix up in just one bowl, and it’ll be ready to eat, start to finish, in about 30 minutes. Soft, gooey, and overflowing with rich, melty chocolate.

Vegan Single Serving Chocolate Chip Cookie
Ingredients
- 1/4 cup almond flour
- 2 tbsp date sugar – I used the Date Lady brand
- 1 tbsp unsweetened applesauce
- 1/2 tsp vanilla extract
- 1 tbsp vegan chocolate chips – I used PASCHA unsweetened chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mix the almond flour and date sugar.
- Add the applesauce and vanilla, and stir to combine into a thick dough.
- Mix in the chocolate chips, and shape the dough onto a baking sheet.
- Bake the cookie for 20 minutes, and let it cool on the pan for another 10 minutes before removing.
