These vegan 3 ingredient pancakes and waffles are my new favorite base for when I feel like getting fancy. This batter makes pancakes OR waffles, and I don’t add any sweetener so that you can really go to town customizing and adding your favorite sweet flavors + textures on top.

Preheat your griddle or waffle iron, let’s doooo this.
Ingredients for vegan 3 ingredient pancakes and waffles
- Rolled oats: you’ll blend the oats to flour consistency, which gives a great dense, satisfying texture.
- Ground flaxseed: flax is super nutrient-dense and helps thicken the batter.
- Nondairy milk: a little nondairy milk brings the batter together. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
Tips to make vegan 3 ingredient pancakes and waffles
- Measure the rolled oats before blending into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 1 cup of whole, rolled oats, then put those 1 cup into your blender to make flour.
- Cook according to your waffle iron’s instructions. All irons (and pancake griddles) are a bit different, so use whatever settings yours has. You’ll be able to tell when they’re ready by carefully poking the center with a clean finger or fork.
- Have fun with the toppings. Top with whatever you like on your pancakes and waffles! Date syrup, nut butter, vegan yogurt, fruit, etc.
You’ll mix all that into a thick batter, cook your choice of pancakes or waffles (or both!), then add whatever toppings you like. Super simple, super healthy, and so, so tasty.

So simple to throw together in just a few minutes, and they’re pretty plain on their own, meaning they’re perfect for adding whatever flavors on top that you’re feelin that day! I always go wild with the fruit and they never disappoint.

Vegan 3 Ingredient Pancakes and Waffles
Ingredients
- 1 cup whole grain rolled oats, blended into flour
- 1 tbsp ground flaxseed
- 3/4 cup unsweetened nondairy milk – I use almond milk, but any nondairy milk should work
Instructions
- Preheat your griddle or waffle iron to medium high heat (or follow instructions for heating your waffle iron, as certain models may differ in directions for cooking).
- Blend the oats to flour consistency and add to a large bowl.
- Add the ground flax and nondairy milk to the oat flour and stir into a thick batter.
- If you're making pancakes, cook on medium-high heat for 5-7 minutes on each side. Feel free to cook slightly longer if you like them a bit darker. If you're making waffles, cook until your iron indicates they're ready. Ours tells us it's ready before the center is cooked, so be aware you may need to cook slightly longer depending on your waffle iron.
- Add toppings of your choice and enjoy!
