I got you.

So today, I’m giving you a sweet little vegan double chocolate mug cake to take care of those cocoa cravings. It’s ready in less than 5 minutes, and it’s the perfect single serving. Because let’s be real, having a big batch of goodies lying around isn’t always ideal.

So, get your mugs and microwaves ready, and let’s make some cake!

Ingredients for a vegan double chocolate mug cake

  • Rolled oats: you’ll blend the oats into flour, which provides a dense, satisfying texture for the mug cake.
  • Cocoa powder: cocoa or cacao powder gives the mug cake rich chocolate flavor.
  • Stevia or date sugar: date sugar or stevia provides a bit of natural sweetness. You could probably also use coconut sugar, but I have only tried this recipe with date sugar and stevia.
  • Applesauce: a bit of unsweetened applesauce helps give the mug cake a soft and gooey texture.
  • Nondairy milk: nondairy milk brings the mug cake batter together. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
  • Vegan dark chocolate chips: I love the Lakanto monk fruit-sweetened chocolate chips, but use any vegan chocolate chips you like.

Tips for making a vegan double chocolate mug cake

  • Measure out the oats first, then blend into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 1/4 cup of whole, rolled oats, then put that 1/4 cup into your blender to make flour.
  • Use a large microwave-safe mug, or a small bowl. I like cooking my microwave mug cakes in a really small bowl just because it’s easier to eat out of! But you can also use a mug that’s on the wider side, just make sure it’s microwave-safe.
  • Mix the dry ingredients, then add the wet. Because you’re working in a small dish, mixing is much easier when you start with the dry ingredients, then add the wet after they’re mixed. This ensures everything will be thoroughly mixed together.
  • Cook for 2 minutes, then add more time as needed. Start with 2 minutes in the microwave, then add 1 more minute at a time, checking each time to be sure the center is cooked to your liking.
  • Add fun toppings. I love to add a few more chocolate chips and a drizzle of almond butter.

Ingredients
  

  • 1/4 cup whole grain rolled oats, blended into flour
  • 1 tbsp cocoa or cacao powder
  • 1 tbsp stevia – or natural granulated sweetener of your choice
  • 1 tbsp unsweetened applesauce
  • 1/4 cup nondairy milk – I use unsweetened almond milk
  • 2 tsp vegan dark chocolate chips – I like the Lakanto monk fruit-sweetened chips

Instructions
 

  • In a microwave safe mug or bowl (it'll puff slightly while cooking, so make sure the bowl or mug isn't so small that it'll overflow), mix the oat flour, cocoa powder, and stevia.
  • Add the applesauce, nondairy milk, and vegan chocolate chips, and mix thoroughly.
  • Microwave the mug cake for 2 minutes. Depending on your microwave you may like it a bit more cooked, so feel free to add more time if it still seems too loose in the middle.
  • Sprinkle with a few more chocolate chips, add any other toppings you like and enjoy!
