Happy Valentine’s Day!! Joe and I are planning on having a fun night in cooking a special dinner together. We’re making bibimbap bowls with homemade kimchi, and I cannot wait! When I’m not dreaming of sweets, Asian food is my absolute favorite, so the Korean in me is SO excited.
After our dinner I’m thinking we’ll need a sweet treat, and that’s where vegan chocolate truffles come in.
These gems are so, so simple, you only need 3 ingredients you probably already have in your kitchen! Plus, they’re totally raw and fruit sweetened. And all that isn’t even touching on how rich, sweet, and chocolatey they taste.

Ingredients for making vegan chocolate truffles
- Raw walnuts: walnuts are the base of the truffles and provide healthy fats.
- Medjool dates:Â dates give the truffles natural, fruit sweetness.
- Cacao powder:Â cacao is super high in antioxidants and gives the truffles rich chocolate flavor.
Tips for making vegan chocolate truffles
- Blend the walnuts first. Start with the walnuts to make sure you don’t have any big pieces left in the final truffles.
- Refrigerate to set up, then store in the fridge or freezer. If you want them more firm, feel free to keep them in the freezer and set them out for a few minutes to thaw before eating. Otherwise, you can store them in the fridge.

Vegan Chocolate Truffles
Ingredients
- 2 cups raw walnuts
- 8 pitted medjool dates
- 1/4 cup cacao powder – regular cocoa powder also works
Instructions
- Add the walnuts to a food processor, and pulse until they're blended into very small pieces.
- Add the dates and cacao powder, and blend until everything is totally mixed into a thick dough.
- Use a tablespoon to measure out 1 truffle, roll it into a ball, repeating until all the dough is gone – you'll end up with about 18 truffles.
- Set on a plate and into the fridge for about 1 hour to set up.
- Store the truffles in the refrigerator. If you want them more firm, feel free to keep them in the freezer and set them out for a few minutes to thaw before eating.
