Helloooo and happy Monday. It’s officially my birthday week!
I don’t go over the top when it comes to my own birthday. Usually I prefer to do something fun but relaxed at home with Joe and our pups. Last year my family did surprise me which was amazing (and my parents just came up to visit last weekend!).
Regardless of what we do to celebrate, you can guarantee there’s ALWAYS dessert.
I love making a fun treat for my birthday (or Joe asks me what I want and follows one of my blog recipes, so sweet), so this week I’ve got 2 celebratory sweets that are perfect for a special occasion! Or like, a random Tuesday, cause they’re still super simple and healthy.
So, let’s kick things off with vegan 3 ingredient chocolate chip cookies! Super easy, oh so chewy and sweet, and topped with alllllll the chocolate chips. They’re much more dry and chewy, similar to a no bake cookie, but SO sweet and satisfying.
Ingredients for vegan 3 ingredient chocolate chip cookies
- Rolled oats: oats give a the cookies a great dense, chewy texture and provide healthy whole grains.
- Medjool dates: dates help the cookies stick together and give natural, fruit sweetness.
- Vegan chocolate chips: I always go for the Lily’s Sweets stevia-sweetened chips to keep everything naturally sweet, but you can use whatever vegan chips you like.
Tips for making vegan 3 ingredient chocolate chip cookies
- Make sure to start with the dry ingredients. Everything will eventually go into the food processor, but it’s important to start with the oats and to make sure the oats get totally blended and you don’t have any whole oat pieces in the final cookies.
- Expect chewy, dense, snack-like cookies. These aren’t traditional, gooey chocolate chip cookies, they’re more of a no bake-esque, super chewy and sweet cookie!
These vegan 3 ingredient chocolate chip cookies are SO easy and quick to throw together, and I speak from experience when I say you’re going to want to double the batch. Ours did not last long! They’re so chewy, sweet, and of course, the abundance of chocolate chips never hurts.

Vegan 3 Ingredient Chocolate Chip Cookies
Ingredients
- 1 cup whole grain rolled oats
- 12 pitted medjool dates
- 1/4 cup vegan dark chocolate chips – I like the Lily's Sweets vegan stevia-sweetened chips
Instructions
- Preheat the oven to 350 degrees.
- Add the oats to the food processor and blend until they reach flour consistency.
- Add the dates to the food processor and blend for 2-3 minutes, until the mixture comes together into a ball of thick dough.
- Measure out 2 tbsp of dough and shape into cookies, then set on a parchment or silicone mat-lined baking sheet.
- Press chocolate chips into the top of each cookie, then bake for 10 minutes.
- Let the cookies cool on the sheet for at least 15 minutes before carefully removing.
- Store leftovers in a container at room temperature or in the fridge.
Hello I was wondering if I could replace dates with maple syrup instead
Hi Teresa, I haven’t tried any substitutions for this recipe so I’m not sure whether maple syrup would work – I’m not sure how much you would need since it’s more of a liquid than date paste, and it would probably change the final texture. Let me know how it goes if you try that swap!
This is the best one I’ve Googled that has all healthy stuff. Most try to get some brown sugar, or butter in there somehow and pretend it’s healthy. This one is one of the very, very few legit healthy ones.
