This vegan 4 ingredient cookie cereal is super simple to make with just a few ingredients, and such a fun, healthy sweet treat.
Let’s talk about childhood cereals, or what may be better called bowls of pure sugar lacking any nutrition whatsoever!
Looking back I shudder at the thought of eating a bowl of sugary cereal first thing in the morning, but let’s be real, we’ve all got fond memories of those days and we definitely have strong opinions about the best ones (or at least, my husband and I do).
My personal top 3: Oreo O’s, cookie crisp, and cocoa puffs. I’ve already got a healthy vegan version of cocoa puffs, and some day I will make Oreo O’s happen cause that was my ALL TIME FAVORITE sugary kid’s cereal ever.
But today, we’re vegan-izing + health-ifying my other favorite, cookie crisp. This vegan 4 ingredient cookie cereal is simple, fruit-sweetened, and waaay better than the pure sugar I had as a kid. It’s not tear up the roof of your mouth crunchy, but rather sweet, soft and chewy little mini cookies that are made with just a few healthy ingredients, in way too fun to eat in cereal form.
Ingredients for vegan 4 ingredient cookie cereal
- Rolled oats: you’ll blend the oats to flour consistency, which helps hold the cereal together and provides some healthy whole grains.
- Medjool dates: blended with water into a paste, dates provide natural, fruit sweetness and the sticky texture to help the cereal come together.
- Vanilla extract: a bit of vanilla adds classic cookie flavor.
- Cacao nibs or mini vegan chocolate chips: I like using cacao nibs for their health benefits and because they’re really small, but chocolate chips obviously taste great too! I prefer to use naturally sweetened chips like Lily’s, but use whatever vegan chocolate chips you like. If you are going the chocolate chip route, mini is best here, as the cereal pieces are very small.
Tips for making vegan 4 ingredient cookie cereal
- Measure the rolled oats before blending into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 2 cups of whole, rolled oats, then put those 2 cups into your blender to make flour.
- Put your patient pants on. Getting all the dough shaped into tiny cookie discs then pressing in the cacao nibs can take a few minutes – like, over an hour if you’re going solo (would be so fun with little ones!). Listen to a podcast or some music while you work to help pass the time!
- Let the cereal sit out to get a little crunchy. After baking, let the cereal sit out on the sheet for 1 hour. It won’t get super crunchy like store-bought cereals, and will soften up a bit when stored.
This vegan 4 ingredient chocolate cereal is sweet, so simple, and seriously pure fun in a bowl. I love recreating favorite flavors from my childhood, and these are extra nostalgic for me. Perfect for a fun weekend baking project, and gone way too fast.

Vegan 4 Ingredient Cookie Cereal
Ingredients
- 2 cups rolled oats, blended into flour
- 3/4 cup date paste – 12 medjool dates blended with 3/4 cup hot water
- 1 tbsp vanilla extract
- 1 tbsp cacao nibs or mini vegan chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl mix the oat flour, date paste and vanilla and stir until it forms a thick dough. I start with a spoon to get things going, then use clean hands to squeeze and press the dough so that everything is evenly incorporated into a big ball of dough.
- Measure out 1/2 teaspoon of the dough and set it on the sheet (don't worry about shaping it yet), repeating until all the dough is on the sheet in the small pieces. Then, go back and form each piece of dough into a small, circular cookie shaped disc.
- Press a cacao nib (or mini chocolate chip) into each piece of cereal, then bake for 30 minutes.
- Allow the cereal to sit out on the counter for 1 hour after baking to get a bit crunchy – it still won't be super crunchy like store-bought cereals, it's more soft and chewy, but it will firm up quite a bit as it cools.
- Store in a tupperware at room temperature.
