Back at it with another no bake cookie bite recipe for you! I’ve been loving these fun little gems lately (did you see the strawberry lemon version?!), so let’s just roll with it. Who doesn’t want a teeny tiny, perfectly poppable, no bake cookie?! Nobody I want to know, that’s for sure.
Today we’ve got a perfect summery flavor in these vegan no bake mango coconut cookie bites! These have all the tropical flavors that I absolutely love for summertime, and of course, it’s just a plus that we don’t have to turn on the oven in the warmer months.

Ingredients for vegan no bake mango coconut cookie bites
- Raw almonds: almonds are the base of these cookie bites, and they give them soft texture as well as healthy fats.
- Freeze dried mango: freeze dried mango provides lots of sweet mango flavor, but no moisture to throw off the texture of the cookie bites.
- Medjool dates: we’re sweetening these naturally with dates, which give lots of sweet, fruity flavor and sticky texture to hold the cookie bites together.
- Shredded coconut: coconut gives all the tropical vibes and pairs so well with mango. Make sure to choose unsweetened coconut.
Tips for making vegan no bake mango coconut cookie bites
- Blend the almonds and mango first. Make sure to start with these two ingredients before adding the dates and coconut. This ensures you won’t have any whole almond pieces in the final cookie bites, and that everything gets blended evenly.
- Use a tablespoon to roll out uniform cookies. The dough is sticky and slightly crumbly, so press it into a tablespoon then press between your hands to create cookie bite shapes until it’s gone.
- Freeze the cookie bites. Freezing for a bit helps the cookie bites to set up, since they’re a bit delicate. After freezing, you can store them in the fridge or freezer.
These vegan no bake mango coconut cookie bites are super chewy, full of amazingly sweet mango flavor, and plenty of coconut for bomb texture and all the tropical feels. I couldn’t get enough of these, and hope you guys love them as much as I did.

Vegan No Bake Mango Coconut Cookie Bites
Ingredients
- 1 cup raw almonds
- 1 cup freeze dried mango
- 12 pitted medjool dates
- 1/2 cup unsweetened shredded coconut – I used the very finely shredded coconut, not large flaked coconut
Instructions
- To start, add the almonds and freeze dried mango to a food processor and blend for 15-20 seconds.
- Add the dates and coconut and blend for 2-3 minutes, until everything is combined into a soft dough.
- Measure out 1 tbsp of dough for each cookie, press between your hands to form a circular shape, and set on a plate. Repeat until all the dough is gone – you'll end up with about 16 cookie bites.
- Put the cookie bites in the freezer for at least 30 minutes to set up.
- I recommend storing leftovers in the freezer, as the texture is pretty soft and delicate – they're meant to be a one bite treat, pop in you mouth treat!
These are delicious and perfect for the hot weather.
I did them and kept them in the freezer. I would eat the straight from the freezer and they are such a nice treat! I really enjoyed the mango and coconut flavours together.
