When I post something that’s not sweet…you KNOW it’s going to be worth it to try, right?!

That’s absolutely the case with this vegan low-fat cheese sauce. Rich, creamy, full of that savory cheesy flavor, it’s the perfect addition to pretty much any savory meal. Add it to a stir fry, drizzle it over roasted veg, use it as a dip for your sweet potato fries (sweet potato inception), the options are truly endless.

Now that I think of it, I will most definitely be making this for thanksgiving, cause it legit is good with EVERYTHING and no thanksgiving is complete without multiple sweet potato offerings, at least in my sweet potato-obsessed opinion.

Ingredients for vegan low-fat cheese sauce

  • Orange sweet potato: sweet potato gives this cheese sauce a super rich and creamy texture. Normally I eat the skins, but for a smooth sauce, peeling is the way to go.
  • Carrots: carrots add just a touch of sweetness, and should also be peeled before boiling.
  • Nutritional yeast: not only is nutritional yeast a great source of plant-based protein, it gives amazing savory, cheesy flavor.
  • Garlic powder: garlic gives the sauce more flavor. Feel free to add any other spices you like, too!
  • Apple cider vinegar: adding a bit of vinegar rounds out the cheese sauce, giving it just a bit of tang.
  • Water: water thins out the sauce, and you can use as much or as little as you’d like to get a texture you prefer. I go with about 3/4 cups because I like mine pretty thick, but you can add more for a thinner consistency.

Tips for making vegan low-fat cheese sauce

  • Cut the veggies into small pieces. Before boiling, chop the sweet potato and carrot into small pieces rather than larger chunks for faster cooking.
  • Start with less water and add as you go to get the texture you like. I prefer my vegan low-fat cheese sauce thick, almost like a dip, but you may want it more runny if you’re mixing it into your meal. Start with less liquid, you can always add more as you go.
  • Feel free to add more spice or seasoning. Once you taste the base cheese sauce, you can experiment with adding some spices that you like! I personally love adding red pepper flakes or hot sauce for a spicy cheese sauce.

Vegan Low-Fat Cheese Sauce

Vegan Low-Fat Cheese Sauce

Servings 2 cups

Ingredients
  

  • 1 large orange sweet potato, peeled and chopped – about 3 cups chopped
  • 2 medium carrots, peeled and chopped – about 1/2 cup chopped
  • 1/2 cup nutritional yeast
  • 1 tbsp garlic powder
  • 2 tbsp apple cider vinegar
  • 3/4 cup water

Instructions
 

  • Cut the peeled sweet potato into small cubes, and cut the peeled carrot into small rounds.
  • Bring a pot of water to a boil and cook the sweet potatoes and carrots uncovered until tender, about 20 minutes.
  • Add the sweet potato, carrot, and all the remaining ingredients to a food processor and blend until totally smooth and creamy. Depending on the size of the sweet potato and carrots you use, you may want to add slightly more/less water to get a consistency you like, so you can start with 1/2 cup water and work your way up from there.
  • Store leftovers in the refrigerator.
