When I was little and still eating girl scout cookies, my favorite was hands down the tagalongs. The chocolate + peanut butter just couldn’t be topped. At that time, I didn’t like coconut. Or at least, I told myself I didn’t like coconut. Now that I’m so old and wise (ha), things have changed.

I don’t eat girl scout cookies any more, but I can still appreciate the fun flavor combinations. And I have to say, I feel like my favorite would be a tie between the tagalongs and samoas. Those things sound downright dreamy – toasty coconut, silky sweet caramel and chocolate? Sign me UP.

Ingredients for a vegan samoa shake

  • Chickpeas: you’ll use drained and rinsed canned chickpeas as the base of the shake. Sounds weird, but trust me, it makes it super thick, rich, and creamy.
  • Nondairy milk: nondairy milk helps everything blend together. I use unsweetened soy milk for neutral flavor and thick texture, but any nondairy milk should work.
  • Cocoa powder: cocoa gives the shake chocolate flavor.
  • Medjool dates: a couple of pitted dates sweeten the shake.
  • Shredded coconut: unsweetened shredded coconut gives the best chewy texture and flavor, especially after toasting.
  • Ice: because we aren’t using frozen fruit, adding ice helps the shake stay cool.
  • Vegan dark chocolate chips: the best sprinkle on top!

Tips for making a vegan samoa shake

  • Don’t skip toasting the coconut. I know it’s an extra step, but toasting the coconut really brings out the flavor and makes it more samoa-esque!

Ingredients
  

Shake

  • 1 1/2 cups chickpeas – 1 can, drained and rinsed
  • 1/2 cup nondairy milk – I used unsweetened soy milk
  • 1 tbsp cocoa powder
  • 2 pitted medjool dates
  • 1 tbsp unsweetened shredded coconut, toasted
  • 10 ice cubes

Toppings

  • 1 tbsp unsweetened shredded coconut, toasted
  • 1 tsp vegan dark chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees and toast the coconut in the oven for 5-7 minutes, until golden and fragrant – watch it closely, it can burn quickly!
  • In a high speed blender, mix all the shake ingredients until totally smooth and creamy.
  • Top with more coconut and dark chocolate chips and enjoy!
