Here in Detroit it has been cooold cold cold. I tend to run really cold and HATE winter weather, and January is always the hardest month for me to get through, so I won’t be sad to see it go soon!

In the meantime, I’ll be making myself all the vegan single serve peanut butter banana baked oatmeal. This is such a perfect warming, cozy breakfast, and all you need is 6 healthy ingredients and 20 minutes. I’ve got recipes if you want to make a larger batch of baked oatmeal, but this is perfect for those mornings you just want something for yourself.

Ingredients for vegan single serve peanut butter banana baked oatmeal

  • Rolled oats: I always use old fashioned rolled oats because it gives the best texture and chew. Oats are so nutrient-dense and a great satiating, whole grain to start your day with.
  • Ground flaxseed: flax provides super healthy omega-3 fats and helps hold this oatmeal together.
  • Cinnamon: cinnamon is a perfect complement to both the peanut butter and banana.
  • Banana: make sure the banana is super ripe, as it’s the only sweetener in this recipe.
  • Nondairy milk: you’ll use a bit of milk to bring the oatmeal batter together before it goes into the oven. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
  • Peanut butter: make sure to get unsweetened, oil-free peanut butter. A lot of store-bought nut butters have a lot of added junk that you don’t want. The only ingredients should be peanuts and maybe a bit of salt!

Tips for making vegan single serve peanut butter banana baked oatmeal

  • Be sure to use an oven-safe dish. Because this is a single serve portion, make sure that whatever smaller dish you use is safe for the oven.
  • Customize with your favorite additional toppings. Of course the peanut butter + banana combo is amazing on its own, but feel free to fancy it up with anything else you like on oats!

This bowl is full of fiber, satiating whole grains, healthy omega-3s from the flaxseed, tons of vitamins, minerals, and antioxidants from the oats and banana, and more healthy fats and a bit of protein from the peanut butter. I’m in love with overnight oats, but love that this single serve portion is super quick and it’s always so nourishing and cozy on the chilliest mornings.

Vegan Single Serve Peanut Butter Banana Baked Oatmeal

Ingredients
  

  • 1/2 cup whole grain rolled oats
  • 1 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1/2 cup ripe banana, mashed
  • 1/2 cup nondairy milk – I used unsweetened almond milk
  • 1 tbsp natural, unsweetened peanut butter – only ingredients should be peanuts and salt

Instructions
 

  • Preheat the oven to 350 degrees.
  • In an oven safe bowl, mix the oats, flax, and cinnamon.
  • Add the mashed banana and nondairy milk and mix until everything is incorporated.
  • Bake the oats for 20 minutes.
  • Once they've slightly cooled, top with a drizzle of peanut butter and more sliced banana.
