So after a few randomly freezing days earlier this week, I am SO happy to say that it finally feels like spring, and I think this time it’s here to stay!! I’m so affected by the weather in terms of my general mood and happiness, and I hate hate hate being cold, so this extra long winter was a little rough for me here in Ohio.
I always try to see the positive, though, in that the cold days help me to appreciate bright, sunny, HOT days to come! Spring is such a pretty time, but let’s be real, I want it to speed up to summer. Berries are synonymous with summer to me, so these vegan blueberry waffles are just giving me all the feels in anticipation of my favorite season of the year. Now that I’ve rambled about seasons and weather for far too long, let’s talk breakfast!
Before I made these, I had been seriously craving waffles for like, several days. Honestly it was a bit weird, as normally I’m team pancake all the way if I’m feeling fancy at breakfast. But sometimes I just want a good chewy, soft waffle, with all those perfect little crevices begging for toppings!
These vegan blueberry waffles are sweet, simple, and will definitely satisfy your serious waffle cravings.
Ingredients for vegan blueberry waffles
- Rolled oats: you’ll blend the oats to flour consistency, which give the waffles a great dense, satisfying texture and chewy texture.
- Nondairy milk: a little nondairy milk brings the batter together. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
- Blueberries: fresh or frozen work, and add great pops of sweet flavor throughout the waffles.
Tips for making vegan blueberry waffles
- Measure the rolled oats before blending into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 1 cup of whole, rolled oats, then put those 1 cup into your blender to make flour.
- Sweeten the batter if you’d like. The waffle batter is unsweetened, but you can add some stevia if you’d like the waffles themselves to be a bit sweeter. I usually save that for the toppings, but go with whatever you like!
- Cook according to your waffle iron’s instructions. All irons may vary a bit, but you should be able to tell when it’s cooked to your liking based on the outside and using a fork to carefully poke the center.
- Have fun with the toppings. Of course we have lots of blueberries, but I also love some unsweetened vegan yogurt for a bit of tang to contrast the sweet fruit.

Vegan Blueberry Waffles
Ingredients
- 1 cup rolled oats
- 3/4 cup nondairy milk – I used unsweetened almond milk, but any nondairy milk should work
- 1/2 cup blueberries
Instructions
- Preheat the waffle iron.
- In a large bowl, mix the oat flour and almond milk into a thick batter, and gently fold in blueberries. You can add a little stevia here if you want your waffles a bit sweeter.
- Cook the waffles in the iron – this amount of batter makes one full size waffle, and there will be a bit leftover for a smaller one, too. Mine took about 10 minutes in my iron, but this time might vary depending on your waffle iron.
- Once the waffles are cooked add toppings of your choice and enjoy!
I am glad to have stumbled onto your site. Even though I am no Vegan, I am eager to try out most of your gluten-free and vegan recipes. These were good! I left out the corn starch and used 1 cup oats and 1 1/2 cups of flour, and added a teaspoon of vanilla extract. I also used frozen blueberries, so I folded them into the batter before making the waffles. Simply scrumptious breakfast!
