Hi guys! What’s new? I’m enjoying my last few weeks of summer but I’ve been staying pretty busy prepping for this school year. If you’re new around here, I’m not talking about school as a student – I’m a kindergarten teacher! So, summer is rapidly winding down for me, and I’m going to have to start keeping track of what day it is again. First world problems, I know! Honestly, I am SO excited to go back to school. Having the summer to unwind, relax, and get ready for another year is such a blessing and I’m so grateful for that time. But I’m also someone that thrives on being busy and productive, so I’m really, really ready for the best school year yet!
Soon my days of lengthy morning workouts and special breakfasts any random day of the week will be gone. But we’ve always got the weekend, for fun breakfasts, right? Weekends are basically made for pancakes. Specifically, vegan buckwheat banana pancakes. Let’s talk about them!
Ingredients for vegan buckwheat banana pancakes
- Buckwheat flour: buckwheat keeps the pancakes gluten and grain free, and gives a super gooey, rich texture (and also the slightly gray color).
- Banana: super ripe and spotty banana gives the pancakes sweetness and lots of banana flavor.
- Nondairy milk: milk brings the pancake batter together. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
Tips for making vegan buckwheat banana pancakes
- Have fun with the toppings. Pancakes are always even better with whatever toppings you like. I love a drizzle of date syrup and more bananas, but any other fruit, nut butter, vegan yogurt, or vegan chocolate chips would also be great.

Vegan Buckwheat Banana Pancakes
Ingredients
- 1 riped banana, mashed
- 1/2 cup buckwheat flour
- 1/2 cup nondairy milk – I used unsweetened almond milk
Instructions
- In a large bowl, mash the banana then add the buckwheat flour and nondairy milk, and stir until completely combined.
- On a nonstick or sprayed griddle on medium-high heat, measure out 1/2 cup of batter for each pancake. Mine take about 8-10 minutes on each side, but when you see the edges start to dry out and you feel with a spatula it's pretty set, they're ready to flip.
- Serve plain or with your favorite toppings – we love almond butter, more fresh bananas, or date paste.
That’s not a pancake stack, that’s a beautiful buckwheat pancake TOWER!! And so uniformly shaped too, I don’t know how you do it. I know it’s been said a zillion times, but I do actually feel like it was just yesterday we were chatting about the start of summer break–how is it already almost august? Ah well, I’m glad that you are excited about getting back into the school schedule though. Even if that means epic banana-filled breakfasts like this have to be reserved for just 2 days of the week. But hey, back to back pancakes on the weekends sounds good to me! Love the simplicity–you are going to get me started on buckwheat flour yet, its only a matter of time just like with the banana flour 😀

I was SUPER meticulous with my pouring, but I’m not going to lie, when I’m making them any other day they aren’t quite so symmetrical 🙂 but thanks for noticing!! Hi Kathryn! So happy you liked them!! My husband and I have tried it a couple times for pizza crust too – soooo good. These pancakes are so easy and yum but honestly those cookies blew me away, like I had to get them out of our house so I wouldn’t eat them all! 🙂
