Serious question: does anybody NOT love a bowl of cereal? I’ve never met anybody who turns down a sweet, crunchy, cereal, with just the right amount of milk.

It has been way too long since I made a cereal recipe. Last year I made this addictive, 3 ingredient, vegan version of cocoa puffs. Obviously every recipe that makes it to the blog is good in my eyes, but that one forever holds an extra special place in my heart. I loved cocoa puffs as a kid, and the fact that I can make a super simple, healthy, and vegan version makes me SO happy.

Well, now that we’re in the peak of fall, I knew it finally had to happen: a vegan version of cinnamon toast crunch.

Ingredients for vegan 3 ingredient cinnamon cereal

  • Rolled oats: you’ll blend the oats to flour consistency, which helps hold the cereal together and provides some healthy whole grains.
  • Cinnamon: cinnamon gives that CTC vibe and is the star here when it comes to flavor.
  • Medjool dates: blended with water into a paste, dates provide natural, fruit sweetness and the sticky texture to help the cereal come together.

Tips for making vegan 3 ingredient cinnamon cereal

  • Measure the rolled oats before blending into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 2 cups of whole, rolled oats, then put those 2 cups into your blender to make flour.
  • Put your patient pants on. Rolling out the dough, cutting into little pieces and moving it carefully to the baking sheet will take a few minutes. Listen to a podcast or some music while you work to help pass the time!
  • Let the cereal sit out to get crunchy. After baking, the cereal needs to sit out on the counter for at least 2 hours. This is when it gets that crunchy texture! Because oats are the main component of the cereal, it will soften up a bit when stored in a tupperware container, so you may need to let it sit out again if you want it REALLY crunchy.

This vegan 3 ingredient cinnamon cereal is crunchy, sweet, and so, so addictive! As much as I love baking special-occasion worthy sweets, cereal is one of my favorite things to make, something about it is just so fun. It’s definitely worth the extra time to make all the little pieces, trust me.

Vegan 3 Ingredient Cinnamon Cereal

Prep Time 20 minutes
Cook Time 30 minutes
Total Time 50 minutes

Ingredients
  

  • 2 cups rolled oats, blended into flour
  • 2 tbsp cinnamon
  • 1 cup date paste – 15 medjool dates blended with 1 cup hot water

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the oat flour and cinnamon.
  • Add the date paste, and stir to combine into a thick dough.
  • On a piece of parchment paper, use your hands to press and spread the dough into an even layer in a rectangular shape.
  • Cut the dough into small squares, first cutting horizontal lines all across the dough, then going back and cutting vertically to make squares.
  • Move each square to a baking sheet lined with parchment paper or a nonstick baking mat.
  • Bake for 30 minutes.
  • Allow the cereal to sit out on the counter for at least 2 hours – this is when it will get crunchy.
  • Store in a tupperware at room temperature – the cereal will soften over time especially if you keep the lid on, so if you want it extra crunchy, you may need to toast it again in the oven.
