- Don’t overdo it with the extracts. Almond extract is very strong, so if you haven’t used it before, less is more! It’s what gives that classic cake batter flavor, but start with a little and you can always add more.

Vegan Cake Batter Cashew Butter
Ingredients
- 3 cups raw cashews
- 1 tsp almond extract
- 2 tsp vanilla extract
- Liquid stevia drops, to your taste
Instructions
- Put the cashews in the food processor and blend, stopping to scrape down the sides with a spatula as necessary every 5 minutes or so.
- Continue blending until the texture is totally smooth and creamy, which will take about 25 minutes, depending on your food processor/blender.
- Add the almond extract, vanilla extract, and liquid stevia drops to the food processor.
- Blend until totally smooth and creamy.
- Store in the refrigerator.
