Since going vegan, I’ve literally eaten thousands of sweet potatoes. It’s safe to say they’re one of my absolute favorite foods on the planet, and I eat at least 1 every single day. Not only are they ridiculously nutrient-dense, but they’re also SO satisfying, keeping me full and giving me lasting energy all day long.
Basically, I’m part sweet potato at this point.
A couple weeks back I walked you through my favorite ways to cook my favorite 3 types of sweet potatoes, so today we’re putting those oven roasted, super affordable orange gems to good use.
Let’s talk about vegan loaded breakfast sweet potatoes! These are sure to fill you up allllll morning long. They’re also great for meal prep. Roast a bunch on the weekend, then during the week you can grab one out of the fridge, throw on a few toppings, and you’re good to go.
Ingredients for vegan loaded breakfast sweet potatoes
- Cooked sweet potato: you want a super gooey, soft sweet potato that was baked in the oven. You can make it the day of (though you’ll have to wait for it to cool off), or grab one that you prepped ahead of time out of the fridge.
- Fruit: any fresh or frozen fruit you like goes! I love banana or berries.
- Drizzle: think nut butter, date syrup, or unsweetened vegan yogurt. All are great, but I’m pretty partial to almond butter (SO good with banana!).
- Crunch: a little crunchy texture to break up that soft, gooey sweet potato goes a long way here. I’ve got recipes for oil-free granola, and a nut-free (also oil-free) granola that would both be great here.
Tips for making vegan loaded breakfast sweet potatoes
- Prep your sweet potatoes ahead of time for a super quick breakfast. Having sweet potatoes pre-baked and grabbing them out of the fridge makes for a super quick assembly on a busy morning.
- Have fun mixing it up with the toppings. These are super fun to customize with your favorite flavors and textures, so mix it up to see what you like best!

Vegan Loaded Breakfast Sweet Potatoes
Ingredients
- Cooked sweet potato
Fruit
- Any fruit you like, my favorites are banana and berries
Drizzle
- Any sauce or drizzle you like, such as oil-free nut butter, unsweetened vegan yogurt, or date syrup
Crunch
- Sprinkle some texture on top using nuts or some oil-free granola
Instructions
- Wash the sweet potato and poke all over with a fork, then roast in the oven at 400 degrees for 45-90 minutes, until it's soft in the center when poked through with a knife or fork.
- Once the potato is completely cool, add the fruit, drizzles, and crunchy ingredients you like and enjoy!
