Vegan no bake cinnamon bun energy bites are absolutely perfect if you live a super busy, on the go lifestyle, because they require one bowl (your food processor), no baking, and just 5 healthy ingredients you may already have in your kitchen!
Ingredients for vegan no bake cinnamon bun energy bites
- Rolled oats: oats give the energy bites a chewy texture and help hold them together, while also providing some healthy whole grains.
- Cinnamon: cinnamon gives the energy bites their spice flavor.
- Vanilla extract: a little vanilla complements the cinnamon flavor.
Almond butter: almond butter provides richness and healthy fats, but make sure to get unsweetened and oil-free! A lot of nut butters are full of junk you don’t need, so make sure the only ingredients are almonds and maybe a bit of salt. - Medjool dates: dates not only provide natural, fruit sweetness, but their sticky texture helps hold the energy bites together.
Tips for making vegan no bake cinnamon bun energy bites
- Make sure to blend the oats first. Everything will eventually go into the food processor, but it’s important to start with the oats to make sure they get totally blended and you don’t have any whole oats in the final energy bites.
- Use your hands to test the texture after blending. This recipe is pretty flexible, and depending on the dates and almond butter you use, you may need to adjust the other ingredients slightly to get the right texture. If they seem too crumbly to roll into balls, add a few more dates or a little almond butter, if they seem too wet, add more oats.

Vegan No Bake Cinnamon Bun Energy Bites
Ingredients
- 1 cup rolled oats
- 1 tbsp cinnamon
- 1 tsp vanilla extract
- 3/4 cup oil-free unsweetened almond butter
- 12 medjool dates
Instructions
- Combine all the ingredients in the food processor and blend until totally combined.
- Roll the mixture into bites the size of your liking – I made about 10 bites using a little over 1 tbsp of the dough for each.
- Store in the refrigerator.
I want to try this this weekend! I never get around to using the food processor cuz it’s so annoying to clean but you have so many amazing healthy recipes on here, I need to get over that!

And YES oh my goodness I can totally relate to that sentiment, I still am not the biggest fan of cleaning mine but I always just do it as soon as I finish making whatever it is that way nothing has time to really like “set” onto it, makes it a lot easier! Plus, the snacks are always going to be worth it 🙂
What are the calories in this? Serving?
I’m not sure of exact calorie amounts cause it depends on how big you make them and the specific brands of ingredients you use, but they’re roughly 250 calories per energy bite if you make 10! Hope that helps
