It’s been a minute since I shared some energy bites, and whenever I do, you guys seem to LOVE them. Obviously, I’m right there with you. A sweet, quick, no bake snack made with healthy ingredients that tastes like a chewy little ball of cookie dough?! Sign me up.

Of course, we’re going the pumpkin spice route, because, ya know, fall. These vegan no bake pumpkin spice energy bites require just 5 healthy ingredients and about 5 minutes. Plus, they’re the perfect sweet after dinner bite or mid-afternoon snack.

Ingredients for vegan no bake pumpkin spice energy bites

  • Rolled oats: oats help the energy bites to hold their shape and give some healthy whole grains.
  • Cashew butter: cashew butter provides richness and healthy fats, but make sure to get unsweetened and oil-free. A lot of nut butters are full of junk you don’t need, so make sure the only ingredients are cashews and maybe a bit of salt.
  • Medjool dates: dates not only provide natural, fruit sweetness, but their sticky texture helps hold the energy bites together.
  • Pumpkin puree: you don’t need much since all the fall flavor really comes from the spice, but I figured we should throw in some actual pumpkin since they’re pumpkin spice energy bites, after all.
  • Pumpkin pie spice: warm pumpkin spices bring all the fall flavor to these energy bites.

Tips for making vegan no bake pumpkin spice energy bites

  • Be patient when blending and stop to scrape down the blender. Everything may clump into a huge ball at first, just be patient and it may break up on its own. If not, just stop the food processor a few times and break it up with a spatula to help it along until everything is totally combined into a thick, sticky dough.
  • Store in the fridge or freezer. Depending on the texture you like, store the energy bites in the fridge or freezer.

Vegan No Bake Pumpkin Spice Energy Bites

Servings 18 energy bites

Ingredients
  

  • 1 cup whole grain rolled oats
  • 1/2 cup cashew butter – I always use natural, unsweetened and oil free nut butters
  • 10 pitted medjool dates
  • 2 tbsp pumpkin puree
  • 1 tsp pumpkin pie spice

Instructions
 

  • In a food processor, combine all the ingredients and process until totally mixed. It may clump into a huge ball at first, just be patient and it may break up on its own! If not, just stop the food processor a few times and break it up with a spatula to help it along until everything is totally combined into a thick, sticky dough.
  • Scoop out the mixture and roll into balls, using 1 tablespoon for each energy bite.
  • Store in the refrigerator.
