Vegan oil free granola is quick and easy to make and a great healthy snack to have on hand when you want a sweet bite!
Happy Monday!! Let’s have a snack.
I’ve said it before and I’ll say it again – your girl LOVES granola. Like, a little too much, honestly. Over the past couple years I’ve shared many granola recipes. Classic made with 3 ingredients, chocolate, strawberry chocolate chip, tropical, pumpkin spice, gingerbread, chocolate coconut, and peanut butter cup.
All of those recipes are totally nut free, mostly because I know a lot of people have allergies, but also because I tend to inhale a little more granola than is necessary, and eating too many nuts at once upsets my stomach a bit. However, lately I’ve been incorporating more whole nuts in my diet cause they’re just so so good. Plus, they’re such a nutrient-dense, healthy fat source. I’ve also noticed that a handful or two goes a long way in filling me up until my next meal.
So today I’ve got a classic granola with allllll the super nutrient-dense, crunchy, satisfying nuts, and without the oil. It is CRIMINALLY hard to find oil free granolas in most grocery stores. Makes me SO mad! If by some miracle there is an oil free variety, it’s often full of added sugars or unnecessary ingredients.
This vegan oil free granola is naturally sweetened with your choice of maple syrup or date paste. It’s the best sweet snack to make in a big batch and have on hand for the week. I treat it as a dessert at the end of the night and have it with a bit of oat milk like cereal (SO GOOD), Joe prefers it by the handful throughout the day as a snack.
However you like it, just make it, and thank me later.
Ingredients for vegan oil free granola
- Rolled oats: I use old fashioned rolled oats for the best texture and lots of healthy whole grains.
- Raw nuts: you’ll need 2 cups of nuts. I like to use a mix of walnuts, almonds, and cashews for a great mix of healthy fats and different textures.
- Maple syrup or date syrup: I personally love to use date syrup, since it keeps things totally fruit-sweetened and you get all those date antioxidants and health benefits. Date syrup may be hard to find, and maple syrup works perfectly too, so go with whichever you prefer.
- Raisins: The raisins are optional, but add a great pop of sweetness and chewy texture to the granola.
Tips for making vegan oil free granola
- Let the granola sit out after baking. Once it’s out of the oven, let the granola sit out on the sheet pan at room temperature for about 2 hours. This is when it gets super crunchy, so don’t skip this step.
- Mix in the raisins + any other add-ins after baking. After it sits out, break the granola into chunks, mix in the raisins and any other add-ins (like chocolate chips) that you like.
This vegan oil free granola is so, so crunchy, perfectly sweet, and the best satisfying snack or dessert bite. If you’re anything like me, this won’t last vey long at your house. I can never stop at just a handful!
