Vegan Raw Granola

This vegan raw granola is made with a mix of nuts and seeds, naturally sweetened with dates, and totally no bake. It’s great for customizing with your favorite flavors, and the perfect addition to smoothie bowls or on its own as a quick and healthy snack!

As I write this post, we’re settling back in at home after a quick lil vacation to Miami. Joe was between projects at work, so it was a great time for a trip. We both love the beach and hot weather, and Miami was the perfect destination for easy travel and amaaazing weather.

The trip came at the best time, because now that we’ve had daylight savings, it was almost like a “winter is finally over!” thing. I love daylight savings, cause it means warmer days are coming, and I cannot wait for that!

It was an amazing few days with my fave human, so much good quality time that I’m so thankful for. But it’s always nice to get home to my doggies and our routine! We had some amazing meals at vegan restaurants in Miami, but I def missed my kitchen. So, let’s talk about this vegan raw granola!

This vegan raw granola may sound a little weird, and I suppose it is. Granola, with no baking? Yep! We’re using the word “granola” loosely today. This is more of a sweet, chewy, cookie-dough-like mix. It’s perfect for topping your smoothie bowls, or for shoveling straight into your pie hole. Either way, it’s full of healthy fats, naturally sweet, and absolutely addictive.

Ingredients for vegan raw granola

  • Raw almonds: almonds provide great nutty flavor and healthy fats.
  • Raw walnuts: walnuts also provide a ton of healthy fats and make up the base of the raw granola, along with the almonds.
  • Hemp seeds: hemp seeds are a great source of fat AND plant-based protein.
  • Ground flaxseed: flax is full of omega-3s as well as lignans, shown to have anti-cancer properties.
  • Medjool dates: dates give the raw granola its natural, fruity sweetness.

Tips for making vegan raw granola

  • Start with the almonds and walnuts. You’ll pulse the almonds and walnuts in the food processor first. It only takes a quick 20-30 seconds – you don’t want to process things too long, to keep the mixture crumbly and chewy. If you process the nuts for too long, they’ll heat up and eventually break down into nut butter – super tasty, but not what we’re going for today.
  • Use it for whatever you like. This vegan raw granola is full of healthy fats and plant protein, making it a great addition to nice cream or smoothie bowls for extra satiation and energy.

This vegan raw granola is easy to whip together in less than 5 minutes, and it’s great to have on hand as a sweet, addictive way to add healthy fats to your daily diet. Throw it on top of a smoothie or oat bowl, or even sprinkle it over toast! So, so tasty, and no oven necessary.

Servings 3 1/2 cups granola

Ingredients
  

  • 1 1/2 cups raw almonds
  • 1/2 cup raw walnuts
  • 1/4 cup ground flaxseed – you could also use whole seeds, but be sure to blend those before everything else so that they get broken down (in the photos I used whole seeds and didn't grind them first, which is why some are still intact!).
  • 1/4 cup hemp seeds
  • 12 pitted medjool dates

Instructions
 

  • In a food processor, pulse the almonds and walnuts for 15-30 seconds, just to get them broken down a bit.
  • Add the ground flax and hemp seeds, and pulse for another 30 seconds.
  • Add the pitted dates, and blend for 2-3 minutes, until everything is incorporated into a loose, crumbly, sticky dough.
  • Store the granola in a tupperware in the refrigerator.

    1. Hi, Tahira! You could probably just leave the hemp seeds out – I haven’t tried any substitutions, but it shouldn’t change the overall texture much. Let me know how it goes if you try it!

    Hey Sara! Just wanted to let you know that this was the first recipe I made with my new food processor! I balanced on one leg since I’m still non weight bearing, so while I looked ridiculous and my foot hates me right now, I have amazing granola for a strawberry shortcake smoothie bowl tomorrow morning. ????

    1. Hi Alice, I’ve never subbed anything for the almonds, but you could try a different type of nut like cashews or more walnuts – the texture may come out a bit different, let me know how it goes if you do try something else!
