Today, in honor of April Fool’s Day (which I’m actually not a huge fan of, but this recipe happens to fall on this date, so just go with it), we’re having toast.
BUT INSTEAD OF BREAD, WE’RE MAKING TOAST WITH RICE CAKES!

Maybe it’s not an epic concept, and I’m certainly not the first to think of it. But as somebody who isn’t a huge fan of bread (I just prefer other starchy carbohydrate sources like sweet potatoes, brown rice, etc.), I’m absolutely OBSESSED with these vegan rice cake toasts.
I’ve got 4 different flavor combinations for you, and yes, they’re all sweet. At first, I included a few savory options, but like, we’re all aware that avocado on top of anything toasty is good, right? Same with hummus. Those just feel a little common sense to me, plus, you know your girl has allllll sweet teeth. So if I’m going to have a little snack, you can bet I’ll choose sweet over savory, every time.
So if you prefer savory, keep doing your avocado thing, girl. But I just gotta do me! Plus, I know a lot of you are right there with me when it comes to sweets. Let’s chat about sweeeeeeet vegan rice cake toasts.
Ingredients for vegan rice cake toasts
- Brown rice cakes: the perfect neutral and crunchy base for all the different flavors.
- Chocolate protein
- Complement protein powder: I love this protein and it’s the best quality plant-based protein you’ll find! I do have a discount code you can use for your order. Other vegan protein powder should work but may affect the flavor/texture.
- Vegan yogurt: I always use the Kite Hill unsweetened yogurt because it has just a few, recognizable ingredients and a great creamy texture.
- Vegan dark chocolate chips: the Lily’s stevia-sweetened chips are great, but any vegan chocolate chips work! You could also chop up a vegan dark chocolate bar, or mix in some cocoa powder to the yogurt instead.
- Almond butter banana (my favorite!)
- Almond butter: make sure to get unsweetened, oil-free almond butter for optimal nutrition and to avoid unnecessary additives in a lot of store-bought nut butters.
- Banana: the more ripe and spotty, the better sweet flavor you’ll get.
- Berries & cream
- Vegan yogurt: I always use the Kite Hill unsweetened yogurt because it has just a few, recognizable ingredients and a great creamy texture.
- Berries: fresh or frozen berries provide lots of antioxidants and sweet, tart flavor.
- Peanut butter cinnamon raisin
- Peanut butter: make sure to get unsweetened, oil-free peanut butter for optimal nutrition and to avoid unnecessary additives in a lot of store-bought nut butters.
- Cinnamon: cinnamon is the best complement to both the peanut butter and the raisins.
- Raisins: raisins give a great sweetness and chewy texture.
Tips for making vegan rice cake toasts
- Choose unsweetened, whole grain cakes. To get the most nutritional bang for your buck, go with rice cakes that only have rice as an ingredient. A lot have added sugars/oil, so check the ingredients!
- Enjoy them immediately. These are best eaten as soon as you prepare them so the rice cake stays crunchy.

- sliced banana
Berries & Cream
- 1 brown rice cake
- unsweetened vegan yogurt
- mixed berries (I always use frozen and just set them out to thaw)
Peanut Butter Cinnamon Raisin
- 1 brown rice cake
- natural, unsweetened peanut butter
- cinnamon
- raisins
Instructions
