This vegan strawberry shortcake smoothie bowl is creamy, sweet, and super easy to make with just a few healthy ingredients.
Guys, there is ONE DAY LEFT in March. As a summer baby + general warm weather girl, I cannot wait for spring weather and eventually the super hot, summer days.
Summer also means berry season, which I’m almost excited for as the bomb weather. Let’s get ready for all the berry goodness with a vegan strawberry shortcake smoothie bowl! Such a classic summer treat turned into a super simple, raw, healthy breakfast bowl.
Ingredients for a vegan strawberry shortcake smoothie bowl
- Frozen banana: frozen banana gives the smoothie bowl its creamy texture as well as sweetness.
- Frozen strawberries: frozen strawbs provide all the sweet strawberry flavor and lots of antioxidants.
- Protein powder: protein powder gives the smoothie bowl a great thick texture, and makes it more satiating. I always use Complement protein because it’s the best quality, super simple and clean vegan protein you’ll find, but any vegan protein should work (though it may slightly change the texture/flavor).
- Flaxseeds: flax provides lots of healthy omega-3s, but this is optional.
- Water: a little liquid helps everything blend together.
Tips for making a vegan strawberry shortcake smoothie bowl
- Freeze your bananas when they’re super ripe. Always wait to freeze bananas until they’re super ripe and spotty. This is when they have the most sweetness and banana flavor.
- Add as little liquid as possible. I start with just 1/4 cup of water, then add little by little just to help the blender get things going. The less liquid you add, the thicker and more ice cream-like it will be.
- Keep it simple or add some toppings. This smoothie bowl is great on its own, but I love a sprinkle of this raw vegan granola on top. Super addictive, sweet, chewy, and the PERFECT smoothie bowl topping. Plus, here it gives the vibe of the sweet, biscuit-y part of a strawberry shortcake! So good.
This vegan strawberry shortcake smoothie bowl is creamy, sweet, and so full of strawberry flavor. The chewy bites of granola on top give all the classic strawberry shortcake flavors, in healthy, smoothie bowl form.
Such a great way to start the day.
