Hi, guys! Yes, you’re on the right blog, and I’m bringing you a savory recipe today. I know, I know, I can hardly believe my eyes, too! But sometimes I just have to accept that I probably shouldn’t eat something sweet for every meal of the day. Plus, with most of the US going through a freaking out of control deep freeze this past week, I’m welcoming warming, one pot, savory and spicy meals with open arms. Open mouth? Whatever.
You guys see all my sweet creations, but don’t get it twisted – ya girl LOVES dinner time, too! I’m especially in love with spicy food, so when I make this I cover it in hot sauce. But before I get ahead of myself, let’s talk about what’s in this lovely soul satisfying bowl of vegan cheesy broccoli quinoa!
Ingredients for vegan cheesy broccoli quinoa
- Quinoa: quinoa is a great source of plant-based protein and has great fluffy texture.
- Vegetable stock: veggie stock adds flavor to the quinoa
- Frozen broccoli: broccoli adds great nutrition and texture, and you’ll just cook it right in the pot with the quinoa.
- Nutritional yeast: nutritional yeast adds lots of savory, cheesy flavor.
- Mustard: mustard gives a bit of tang to balance out the other flavors.
- Turmeric + garlic powder: these spices add flavor and color.
- Spinach: you’ll add some spinach at the end to wilt down, and it’s an easy way to get more greens into your diet.
- Fire roasted tomatoes: I love some fire roasted tomatoes on top, they add great flavor.
Tips for making vegan cheesy broccoli quinoa
- Cook the quinoa in veggie stock for extra flavor. Obviously water works too, but cooking the quinoa in veggie stock gives it just a little more flavor.
- Use frozen broccoli for convenience. I always use frozen broccoli because it’s usually less expensive and easier to work with.

Vegan Cheesy Broccoli Quinoa
Ingredients
- 1 cup dry quinoa
- 2 cups vegetable stock
- 2 cups frozen broccoli
- 1/2 cup nutritional yeast
- 2 tbsp mustard
- 1/2 tbsp turmeric
- 1 tbsp garlic powder
- 2 big handfuls spinach
- 1/2 cup fire roasted tomatoes
Instructions
- Put the quinoa, stock, and broccoli in a pot and bring to a boil.
- Turn the heat down to medium, cover and cook until the quinoa has absorbed the stock, about 15-20 minutes, stirring occasionally.
- Remove the pot from the heat and add the nutritional yeast, mustard, turmeric, and garlic powder, and stir.
- Add the spinach and stir until the spinach wilts.
- Stir in the fire roasted tomatoes and serve.
Sorry, just made this dish and it has turned to be quite bitter – followed the recipe to a T. What has caused the bitterness? Definitely not a recipe to repeat!
