Vegan Cheesy Broccoli Quinoa

Ingredients
  

  • 1 cup dry quinoa
  • 2 cups vegetable stock
  • 2 cups frozen broccoli
  • 1/2 cup nutritional yeast
  • 2 tbsp mustard
  • 1/2 tbsp turmeric
  • 1 tbsp garlic powder
  • 2 big handfuls spinach
  • 1/2 cup fire roasted tomatoes

Instructions
 

  • Put the quinoa, stock, and broccoli in a pot and bring to a boil.
  • Turn the heat down to medium, cover and cook until the quinoa has absorbed the stock, about 15-20 minutes, stirring occasionally.
  • Remove the pot from the heat and add the nutritional yeast, mustard, turmeric, and garlic powder, and stir.
  • Add the spinach and stir until the spinach wilts.
  • Stir in the fire roasted tomatoes and serve.
