The past few months I’ve been a little busy, you know, birthing + keeping my sweet boy alive, but now that our days have a lot more structure + predictability I’m so excited to be sharing new recipes again!

Today I have got a gem for you guys – a vegan 3 ingredient single serving oatmeal chocolate chip cookie. Because sometimes you really want a cookie, all to yourself, in less than 15 minutes. This is the cookie for those times. No big batch of goodies leftover, just one sweet, chewy, personal cookie, made with 3 healthy ingredients!

Ingredients for a vegan 3 ingredient single serving oatmeal chocolate chip cookie

  • Rolled oats: oats give a the cookies a great chewy texture and provide healthy whole grains.
  • Medjool dates: dates help to hold the cookie together and give it natural, fruit sweetness.
  • Vegan chocolate chips: I like the Lakanto vegan chocolate chips to keep the cookie naturally sweet, but you can use whatever vegan chips you like or omit them altogether.

Tips for making a vegan 3 ingredient single serving oatmeal chocolate chip cookie

  • Make sure the dates are juicy. If the dates are super dry, they’ll be much more difficult to blend into small pieces, so soak them in some hot water beforehand if they’re really dry. Even with super juicy dates they may not get totally broken down – small pieces in the paste are totally fine, you just don’t want any huge chunks after blending so the paste easily mixes in with the oats.
  • Add anything else you like to change it up. Feel free to swap out the chocolate chips for a tablespoon of any other mix ins you like – think nuts, dried fruit, or whatever else ya like in cookies!

Vegan 3 Ingredient Single Serving Oatmeal Chocolate Chip Cookie

Ingredients
  

  • 1/4 cup rolled oats
  • 2 pitted medjool dates
  • 1 tbsp vegan chocolate chips – I love the Lakanto vegan chocolate chips to keep everything naturally sweet, but you can use whatever vegan chips you like

Instructions
 

  • Preheat the oven to 350 degrees.
  • Blend the dates with 2 tbsp hot water.
  • Mix the date paste in a bowl with the oats, then mix in the chocolate chips.
  • Press the dough into a cookie shape and bake on a parchment-lined baking sheet for 10 minutes.

  1. I’m finally getting around to trying this tonight. I really wanted something sweet and almost baked chocolate chip cookies. I remembered this post and whipped this cookie up. It’s so good and perfectly sweet!
