There’s something about baking oatmeal that makes it feel a little more special, indulgent, and perfectly cozy for the colder months. And since I’m currently freezing my bum off in Detroit, I’ll take alllllll the coziness I can get.

  • Rolled oats: I used old fashioned rolled oats because they have great chewy texture.
  • Ground flaxseed: flax provides super healthy omega-3 fats and helps hold this oatmeal together.
  • Banana: make sure the banana is super ripe for optimal sweetness and flavor, as it’s the only sweetener in this recipe.
  • Nondairy milk: you’ll use a bit of milk to bring the oatmeal batter together before it goes into the oven. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
  • Vegan chocolate chips: I like to use naturally sweetened chips like Lakanto or Lily’s but use whatever vegan chocolate chips you like.

  • Be sure to use an oven-safe dish. Because this is a single serve portion, make sure that whatever smaller dish you use is safe for the oven.

The sweet banana and rich dark chocolate go SO well together, it honestly felt like I was eating dessert for breakfast, which I’m always, always a fan of.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp ground flaxseed
  • 1/2 cup ripe banana, mashed
  • 1/4 cup nondairy milk – I used unsweetened almond milk
  • 1 tbsp vegan chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees.
  • In an oven safe bowl, mix the oats and flax.
  • Add the mashed banana, nondairy milk and chocolate chips and mix until everything is incorporated.
  • Bake the oats for 20 minutes.
  • Once they've cooled, top with whatever you like and enjoy.
