These gems are packed with plant-based protein, healthy fats, and whole grains. Oh, and obviously, lots of pumpkin spice flavor! All you need is 6 healthy ingredients, no baking necessary.

Ingredients for no bake vegan pumpkin spice protein energy bites

  • Rolled oats: oats help the energy bites to hold their shape and give some healthy whole grains.
  • Complement protein powder: I do have a discount code you can use to get this protein, it’s hands down the highest quality plant-based protein you’ll find! You could use a different protein powder, but that may change the amounts for the other ingredients slightly.
  • Pumpkin pie spice: warm pumpkin spices bring all the fall flavor to these energy bites.
  • Medjool dates: dates not only provide natural, fruit sweetness, but their sticky texture helps hold the energy bites together.
  • Pumpkin puree: you don’t need much since all the fall flavor really comes from the spice, but I figured we should throw in some actual pumpkin since they’re pumpkin spice energy bites, after all.
  • Almond butter: almond butter provides richness and healthy fats, but make sure to get unsweetened and oil-free! A lot of nut butters are full of junk you don’t need, so make sure the only ingredients are almonds and maybe a bit of salt.

Tips for making no bake vegan pumpkin spice protein energy bites

  • Make sure to start with the dry ingredients. Everything will eventually go into the food processor, but it’s important to start with the oats, protein powder and pumpkin pie spice to make sure the oats get totally blended and you don’t have any whole oat pieces in the final energy bites.
  • Use your hands to test the texture after blending. This recipe is pretty flexible, and if you use a different protein powder, you may need to adjust the other ingredients slightly to get the right texture. If they seem too crumbly to roll into balls, add a few more dates, if they seem too wet, add a bit more protein powder.

Vegan No Bake Pumpkin Spice Protein Energy Bites

Ingredients
  

  • 1/2 cup rolled oats

  • 1 tbsp pumpkin pie spice
  • 8 pitted medjool dates
  • 1/4 cup pumpkin puree
  • 3/4 cup oil-free, unsweetened almond butter – any other nut or seed butter should work, but may change the flavor

Instructions
 

  • Add the oats, protein and pumpkin spice to a food processor and blend until they're totally ground up to flour consistency.
  • Add the dates, pumpkin puree and almond butter and blend until everything is combined into a thick, sticky dough – it should take about 2-5 minutes.
  • Use a tablespoon to portion out each energy bite, pressing it between your hands to form a sphere. Repeat until all the dough is gone – you'll end up with about 18 bites total.
  • Store the energy bites in the refrigerator or freezer (if you want them a bit more firm, just be sure to set them out a few minutes to thaw before enjoying).
