Vegan Thin Mint Shake

Ingredients
  

  • 1 1/2 cups chickpeas - 1 can, drained and rinsed
  • 1/2 cup nondairy milk - I used unsweetened soy milk
  • 1 tbsp cocoa powder
  • 2 pitted medjool dates
  • 2-3 drops peppermint extract - it's SUPER strong, less is more!
  • 10 ice cubes
  • 1 tsp vegan dark chocolate chips (for topping)

Instructions
 

  • In a high speed blender, combine all the ingredients except the chocolate chips and blend until totally smooth and creamy.
  • Pour into a glass, top with chocolate chips and enjoy!
