Vegan Loaded Sweet Potato Fries with Spicy Tahini Dip

Ingredients
  

Loaded Sweet Potato Fries

  • 1 sweet potato, cut into fry shapes - since we're baking the fries, don't cut them too thin or they'll burn
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/2 red bell pepper, chopped
  • 1 tomato, chopped
  • 2 green onions, chopped

Spicy Tahini Dip

  • 1 tbsp tahini
  • 1/2 tbsp hot sauce - I used Frank's red hot
  • 1-2 tbsp water

Instructions
 

  • Preheat the oven to 350 degrees, or if you have an air fryer, preheat it to 380 degrees.
  • Bake the fries until crisp on the outside and tender in the center, for about 30 minutes. The time will vary depending on how you cut the potato and your oven/air fryer, so just keep an eye on them and cook them to your liking.
  • To make the spicy tahini dip, mix the tahini, hot sauce, and water. Feel free to add more/less water depending on how thick or runny you want the dip to be.
  • Add the toppings to the sweet potato fries, then dip in the tahini sauce on the side (or pour it right over the fries!).
