1sweet potato, cut into fry shapes - since we're baking the fries, don't cut them too thin or they'll burn
1/2cupblack beans
1/2cupcorn
1/2red bell pepper, chopped
1tomato, chopped
2green onions, chopped
Spicy Tahini Dip
1tbsptahini
1/2tbsphot sauce - I used Frank's red hot
1-2tbspwater
Instructions
Preheat the oven to 350 degrees, or if you have an air fryer, preheat it to 380 degrees.
Bake the fries until crisp on the outside and tender in the center, for about 30 minutes. The time will vary depending on how you cut the potato and your oven/air fryer, so just keep an eye on them and cook them to your liking.
To make the spicy tahini dip, mix the tahini, hot sauce, and water. Feel free to add more/less water depending on how thick or runny you want the dip to be.
Add the toppings to the sweet potato fries, then dip in the tahini sauce on the side (or pour it right over the fries!).
