Preheat the oven to 350 degrees.
Mix the peeled, sliced apples in a large bowl with the cinnamon and date paste until everything is thoroughly combined and all the apples are evenly coated with the date paste.
Pour the apple mixture into the bottom of a glass pie dish, and bake for 20 minutes.
While the apples are baking, prepare the crumble topping by breaking up the walnuts with your hands, to pieces of your liking. I like mine only slightly broken up so they maintain some crunch - just use clean hands and give them a squeeze to break them up.
Chop the dates into small, bite-sized pieces. They'll stick together a bit and that's okay, just do your best to cut/break them apart.
Mix the walnuts with the cinnamon and chopped dates, and stir to combine.
When the apples are done, sprinkle over the crumble topping, breaking up any large chunks of dates into smaller pieces and make sure everything is spread evenly over the apples.
Bake the completed crumble for another 10 minutes.
Top the crumble with vegan vanilla ice cream, a sprinkle of unsweetened yogurt, a bit of peanut butter, or whatever your little heart desires!
Store leftovers in the refrigerator.
