Preheat the oven to 350 degrees.
In a large bowl, mix the oat flour and cinnamon.
Add the applesauce, date paste, flax eggs, vanilla extract, and nondairy milk, and stir into a thick batter.
Fold in the chopped apple, and pour the batter into a nonstick or parchment-lined loaf pan.
To make the topping, mix the oats, cinnamon, date paste, vanilla extract, and chopped apple, and sprinkle it evenly over the batter in the pan.
Bake the bread for 40 minutes, then let it cool in the pan for 30 minutes before carefully turning it out.
Serve with any toppings/spreads you'd like and enjoy!
