Vegan Apple Pie Bread

Ingredients
  

Bread

  • 2 cups whole grain oats, blended to flour consistency
  • 1 tbsp cinnamon
  • 1 cup unsweetened applesauce
  • 1/2 cup date paste - blend 8 pitted medjool dates with 1/2 cup hot water, then measure out 1/2 cup paste
  • 2 flax eggs - 2 tbsp ground flaxseed in a bowl with 6 tbsp water, set in the fridge for 20 minutes
  • 1/2 tbsp vanilla extract
  • 1/2 cup nondairy milk
  • 1/2 cup peeled and chopped apple

Topping

  • 1/2 cup whole grain oats
  • 1 tsp cinnamon
  • 1/4 cup date paste - 4 medjool dates blended with 1/4 cup hot water, then measure out 1/4 cup paste (or just make 3/4 cup all at the same time, measure out 1/2 cup for the bread batter and 1/4 cup for the topping!)
  • 1/2 tbsp vanilla extract
  • 1/2 cup peeled and chopped apple

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the oat flour and cinnamon.
  • Add the applesauce, date paste, flax eggs, vanilla extract, and nondairy milk, and stir into a thick batter.
  • Fold in the chopped apple, and pour the batter into a nonstick or parchment-lined loaf pan.
  • To make the topping, mix the oats, cinnamon, date paste, vanilla extract, and chopped apple, and sprinkle it evenly over the batter in the pan.
  • Bake the bread for 40 minutes, then let it cool in the pan for 30 minutes before carefully turning it out.
  • Serve with any toppings/spreads you'd like and enjoy!
  • Store leftovers in the refrigerator.
