Preheat the oven to 350 degrees.
In a large bowl, mix the almond flour, cocoa powder, and date sugar.
Add the applesauce and vanilla and mix until everything is combined into a thick dough - I start using a spoon, then use clean hands to mix everything together.
Use clean hands to press and spread the dough into an even layer on a piece of parchment or wax paper, then use a heart-shaped cookie cutter (mine is about 4 inches in height) to cut out as many cookies as you can. Re-shape the dough into an even layer and repeat until all the dough is gone.
Place the cookies on a lined cookie sheet and bake for 20 minutes. If you use a much smaller cookie cutter, you may need to bake for less time.
Let the cookies cool on the sheet for 20 minutes before removing.
If desired, melt the dark chocolate and drizzle over the cookies, then sprinkle with freeze dried strawberry powder.
Store leftovers in the refrigerator.
