Vegan Valentine's Day Chocolate Strawberry Cookies

Ingredients
  

Chocolate Strawberry Cookies:

  • 1 1/2 cups almond flour
  • 1/2 cup cocoa powder
  • 1 cup date sugar (I haven't tried with a different granulated sweetener, but coconut sugar would probably also work)
  • 1/2 cup unsweetened applesauce
  • 2 tsp vanilla extract

Optional Decoration:

  • 1/4 dark chocolate bar, melted - I used a Lily's Sweets baking bar because they melt well, but you can use any vegan dark chocolate you like
  • 1/2 cup freeze dried strawberries, blended into powder

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the almond flour, cocoa powder, and date sugar.
  • Add the applesauce and vanilla and mix until everything is combined into a thick dough - I start using a spoon, then use clean hands to mix everything together.
  • Use clean hands to press and spread the dough into an even layer on a piece of parchment or wax paper, then use a heart-shaped cookie cutter (mine is about 4 inches in height) to cut out as many cookies as you can. Re-shape the dough into an even layer and repeat until all the dough is gone.
  • Place the cookies on a lined cookie sheet and bake for 20 minutes. If you use a much smaller cookie cutter, you may need to bake for less time.
  • Let the cookies cool on the sheet for 20 minutes before removing.
  • If desired, melt the dark chocolate and drizzle over the cookies, then sprinkle with freeze dried strawberry powder.
  • Store leftovers in the refrigerator.
