Vegan Chocolate Truffles

Ingredients
  

  • 2 cups raw walnuts
  • 8 pitted medjool dates
  • 1/4 cup cacao powder - regular cocoa powder also works

Instructions
 

  • Add the walnuts to a food processor, and pulse until they're blended into very small pieces.
  • Add the dates and cacao powder, and blend until everything is totally mixed into a thick dough.
  • Use a tablespoon to measure out 1 truffle, roll it into a ball, repeating until all the dough is gone - you'll end up with about 18 truffles.
  • Set on a plate and into the fridge for about 1 hour to set up.
  • Store the truffles in the refrigerator. If you want them more firm, feel free to keep them in the freezer and set them out for a few minutes to thaw before eating.
