Vegan Loaded Breakfast Sweet Potatoes

Ingredients
  

  • Cooked sweet potato

Fruit

  • Any fruit you like, my favorites are banana and berries

Drizzle

  • Any sauce or drizzle you like, such as oil-free nut butter, unsweetened vegan yogurt, or date syrup

Crunch

  • Sprinkle some texture on top using nuts or some oil-free granola

Instructions
 

  • Wash the sweet potato and poke all over with a fork, then roast in the oven at 400 degrees for 45-90 minutes, until it's soft in the center when poked through with a knife or fork.
  • Once the potato is completely cool, add the fruit, drizzles, and crunchy ingredients you like and enjoy!
