Vegan 3 Ingredient Pancakes and Waffles

Servings 1 serving (1 serving of pancakes OR waffles, double to make 1 serving of pancakes and 1 serving of waffles)

Ingredients
  

  • 1 cup whole grain rolled oats, blended into flour
  • 1 tbsp ground flaxseed
  • 3/4 cup unsweetened nondairy milk - I use almond milk, but any nondairy milk should work

Instructions
 

  • Preheat your griddle or waffle iron to medium high heat (or follow instructions for heating your waffle iron, as certain models may differ in directions for cooking).
  • Blend the oats to flour consistency and add to a large bowl.
  • Add the ground flax and nondairy milk to the oat flour and stir into a thick batter.
  • If you're making pancakes, cook on medium-high heat for 5-7 minutes on each side. Feel free to cook slightly longer if you like them a bit darker. If you're making waffles, cook until your iron indicates they're ready. Ours tells us it's ready before the center is cooked, so be aware you may need to cook slightly longer depending on your waffle iron.
  • Add toppings of your choice and enjoy!
