Vegan 3 Ingredient Chocolate Chip Cookies

Ingredients
  

  • 1 cup whole grain rolled oats
  • 12 pitted medjool dates
  • 1/4 cup vegan dark chocolate chips - I like the Lily's Sweets vegan stevia-sweetened chips

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add the oats to the food processor and blend until they reach flour consistency.
  • Add the dates to the food processor and blend for 2-3 minutes, until the mixture comes together into a ball of thick dough.
  • Measure out 2 tbsp of dough and shape into cookies, then set on a parchment or silicone mat-lined baking sheet.
  • Press chocolate chips into the top of each cookie, then bake for 10 minutes.
  • Let the cookies cool on the sheet for at least 15 minutes before carefully removing.
  • Store leftovers in a container at room temperature or in the fridge.
