1tbspdate sugar - I have only tried this recipe with date sugar, but stevia or coconut sugar would probably also work
1tsppumpkin pie spice
1tbsppumpkin puree
1/4cupnondairy milk - I use unsweetened almond milk, but any nondairy milk should work
Instructions
In a large microwave safe mug or bowl, mix the oat flour, date sugar, and pumpkin pie spice.
Add the pumpkin puree and milk, and stir to combine.
Microwave the mug cake for 2 minutes. Depending on your microwave you may like it a bit more cooked, so feel free to cook more 1 more minute at a time until the center is no longer too loose.
Let the mug cake cool, add any toppings you like and enjoy!
