Vegan No Bake Almond Butter Chocolate Chip Granola Bars

Ingredients
  

  • 2 cups rolled oats
  • 2 tbsp ground flaxseed
  • 1 cup date paste - 15 medjool dates blended with 1 cup hot water
  • 1/4 cup oil-free unsweetened almond butter
  • 1/4 cup vegan dark chocolate chips - I use PASCHA unsweetened chocolate chips

Instructions
 

  • Line a square pan with parchment paper (or use a nonstick silicone pan).
  • In a large bowl, mix the oats and flax.
  • Add the date paste and almond butter and stir to combine.
  • Add the chocolate chips and stir.
  • Press the mixture into an even layer in the pan.
  • Refrigerate overnight, then cut into bars.
  • Store in the refrigerator.
