Vegan Single Serving Chocolate Chip Cookie

Ingredients
  

  • 1/4 cup almond flour
  • 2 tbsp date sugar - I used the Date Lady brand
  • 1 tbsp unsweetened applesauce
  • 1/2 tsp vanilla extract
  • 1 tbsp vegan chocolate chips - I used PASCHA unsweetened chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the almond flour and date sugar.
  • Add the applesauce and vanilla, and stir to combine into a thick dough.
  • Mix in the chocolate chips, and shape the dough onto a baking sheet.
  • Bake the cookie for 20 minutes, and let it cool on the pan for another 10 minutes before removing.
