Vegan Apple Pie Breakfast Cookies

Ingredients
  

  • 1 cup rolled oats, blended into flour
  • 2 cups rolled oats
  • 1 tbsp cinnamon
  • 2 flax eggs - 2 tbsp ground flaxseed in a small bowl with 6 tbsp water, set in the fridge for 15 minutes
  • 1/2 cup date paste - 8 medjool dates blended with 1/2 cup hot water
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 cup diced apple

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix the oat flour, whole oats, and cinnamon.
  • Add the flax eggs and, date paste, applesauce, and vanilla extract, and mix until thoroughly combined.
  • Add the diced apple and mix until everything is thoroughly combined.
  • Portion about 1/4 cup of dough into 12 rounds on a nonstick or parchment-lined cookie sheet.
  • Bake the cookies for 20 minutes, then let them cool on the sheet for at least 10 minutes before removing.
  • Store leftovers in the refrigerator.
