Carefully cut each date length-wise, only halfway through, and remove the pit.
Fill each date with nut butter and place on a parchment lined plate, and chill in the refrigerator for at least 2 hours.
After the dates have chilled, melt the vegan chocolate chips - I just use the microwave, going in 15 second bursts and stirring between each until all the chips are melted
Roll the dates in the melted chocolate and place back onto the parchment lined plate, and freeze for 1 hour.
