Vegan Chocolate Peanut Butter Date Truffles

Ingredients
  

  • 12 medjool dates
  • 1/2 tsp nut butter for each date
  • 1/2 cup vegan chocolate chips

Instructions
 

  • Carefully cut each date length-wise, only halfway through, and remove the pit.
  • Fill each date with nut butter and place on a parchment lined plate, and chill in the refrigerator for at least 2 hours.
  • After the dates have chilled, melt the vegan chocolate chips - I just use the microwave, going in 15 second bursts and stirring between each until all the chips are melted
  • Roll the dates in the melted chocolate and place back onto the parchment lined plate, and freeze for 1 hour.
