1tbspdate sugar - stevia or coconut sugar would likely also work, but I've only tried this recipe using date sugar

1/2cupfinely chopped carrot
1/2cupunsweetened applesauce
1/2cupnondairy milk - I use unsweetened almond milk
Instructions
Preheat your waffle iron – mine only has one setting, but all irons may be a bit different, so go with medium-high heat if you have multiple temperature settings.
Blend the oats to flour consistency and add to a large bowl, then mix in the flaxseed, date sugar and cinnamon.
Add the chopped carrot, applesauce, and nondairy milk and stir into a thick batter.
Pour about half the batter (or enough fill your iron) into the waffle iron and cook according to your iron's directions. Ours sometimes tells us it's ready before the center or edges are cooked, so be aware you may need to cook slightly longer depending on your waffle iron. Repeat until the batter is gone – mine each took about 12 minutes in the iron, and I end up with 2 waffles.
