Have you ever wanted a rich, fudgy brownie, but didn’t want to go through the whole baking deal?

Same. Which is why I made us vegan raw brownie bars! All the chocolate flavor and dense, chewy texture, no baking necessary.

These vegan raw brownie bars are super simple, and you only need 4 ingredients. Raw walnuts and almonds for healthy fats to keep you satisfied, dates for all that natural sweetness, and cacao powder for that rich chocolate flavor (it’s also super high in antioxidants and magnesium!).

Ingredients for vegan raw brownie bars

  • Raw walnuts: walnuts help form the base of the bars and they’re a great source of really healthy fats.
  • Raw almonds: almonds provide great nutty flavor and healthy fats.
  • Medjool dates: dates give the bars natural sweetness from fruit.
  • Cacao powder: cacao brings the rich chocolate flavor, and it’s also super high in antioxidants.

Tips for making vegan raw brownie bars

  • Start with the walnuts and almonds. You’ll pulse the walnuts and almonds in the food processor first, to be sure they’re mostly broken down before adding the dates and cacao.
  • Don’t blend too long. You want the mixture to be crumbly and in small pieces, but you don’t want to blend too long that it warms up and starts to make nut butter. About 5 minutes should be more than enough!
  • Line your pan with parchment before chilling for easy removal. Press the mixture into a square pan lined with parchment paper before setting in the fridge overnight. This makes it easier to lift them out and cut when you’re ready to eat.

Vegan Raw Brownie Bars

Ingredients
  

  • 1 cup raw walnuts
  • 1 cup raw almonds
  • 12 pitted medjool dates
  • 1/4 cup cacao powder – you could also use unsweetened cocoa powder if you don't mind that ingredient not being totally raw

Instructions
 

  • Add the walnuts and almonds to a food processor and blend for about 1 minute, until they're mostly broken down.
  • Add the dates and cacao powder and blend for about 5 minutes, until everything is combined into a thick, sticky dough.
  • Line an 8×8 square pan with parchment paper, then press the brownie bar mixture into an even layer in the pan. The mixture may be a bit wet and oily, that's normal – the nuts release a lot of natural oils.
  • Refrigerate the brownie bars overnight to set. You can also set them in the freezer if you want a more firm texture, just make sure to thaw for 15 minutes before you want to eat them.
  • Cut into 16 brownie bars.
  • Store leftovers in the refrigerator or freezer.
