This vegan chocolate caramel coconut nice cream has all the flavors of the classic samoa girl scout cookie! It’s made with just 4 healthy ingredients, gluten and grain free, and naturally sweet.

Since we’re approaching the end of spring, AKA girl scout cookie season, it’s only appropriate to enjoy one last treat with one of the classic girl scout cookie flavor combos.

We already had a thin mint smoothie bowl, then these addictive little cookie bites which you can make in tagalong, samoa, or thin mint form.

Today we’re going all samoa all the way, with vegan chocolate caramel coconut nice cream. Sweet, creamy, and loaded with all the classic samoa flavors, but in a healthy, naturally sweet form.

The bananas give the rich, creamy nice cream base, while dates provide super sweet, natural caramel flavor. Cacao powder brings the chocolatey flavor, and of course, the coconut finishes it all off.

Ingredients for vegan chocolate caramel coconut nice cream

  • Frozen banana: banana gives the nice cream sweetness and super rich and creamy texture.
  • Medjool dates: dates help to sweeten the nice cream but also provide a caramel-like element.
  • Cacao powder: cacao gives lots of rich chocolate flavor.
  • Shredded coconut: make sure to choose unsweetened shredded coconut for great flavor and chewy texture.

Tips for making vegan chocolate caramel coconut nice cream

  • Freeze your bananas when they’re super ripe. Always wait to freeze bananas until they’re super ripe and spotty. This is when they have the most sweetness and banana flavor.
  • Add as little liquid as possible. I start with just 1/4 cup of water, then add little by little just to help the blender get things going. The less liquid you add, the thicker and more ice cream-like it will be.
  • Keep it simple or add some toppings. This is great on its own, but feel free to add some toppings to make it even more fun! I personally love and recommend adding a generous drizzle of Just Date Syrup on top for even more sweet caramel flavor, then it’ll really take you straight back to childhood and ripping open a fresh box of samoas.

Vegan Chocolate Caramel Coconut Nice Cream

Ingredients
  

  • 2 frozen bananas
  • 2 pitted medjool dates
  • 1 tbsp cacao powder
  • 1/4 cup water – you may need slightly more depending on your blender to get everything blended smoothly, but I like to use as little liquid as possible for a thick texture
  • 2 tbsp unsweetened shredded coconut
  • Optional toppings: Just Date Syrup for more caramel flavor, vegan dark chocolate chips

Instructions
 

  • Add the frozen bananas, dates, cacao powder, and water to a high speed blender and blend until totally smooth and creamy.
  • Top with coconut and any other toppings you'd like, and enjoy immediately.
