Vegan Cinnamon Roll Overnight Oats

Vegan cinnamon roll overnight oats are rich, sweet and perfectly spiced. A super simple + satisfying breakfast, made with 6 healthy ingredients!

I know cinnamon rolls don’t technically have to be tied to a particular season, but the cinnamon spice flavor just feels extra right for the fall. To me, fall food is all about comforting, cozy vibes and these vegan cinnamon roll overnight oats are the best balance of simple, healthy ingredients and still feeling indulgent.

These oats are super thick, rich, and perfectly sweet and spiced. Overnight oats are a great option when you want a healthy, satisfying breakfast on a busy morning since you can prep them the night before. I’ve already made these multiple times since I first tried them, so so good and cozy on a fall morning.

Ingredients for vegan cinnamon roll overnight oats

  • Rolled oats: I always use old-fashioned, whole grain rolled oats because they have the best texture and chew.
  • Ground flaxseed: ground flax provides a lot of nutrition, including omega-3s. It helps to give the oats a nice thick texture.
  • Cinnamon: cinnamon is an essential, of course, and adds the best warm, spiced flavor.
  • Medjool date: a pitted medjool date chopped into small pieces sweetens the oats naturally and gives a caramel-like sweetness and some great chewy texture. It is so so good with the cinnamon!
  • Vanilla extract: a little bit of vanilla goes great with the spice of the cinnamon.
  • Nondairy milk: you’ll soak the oats overnight in nondairy milk to get that nice rich, thick texture. I definitely recommend unsweetened oat milk for neutral flavor and the best rich and creamy texture, but any nondairy milk should work.

Tips for making vegan cinnamon roll overnight oats

  • Add a splash of milk right before serving to get a texture you like. I typically don’t add more liquid at this stage because I like my oats really thick, but feel free to add a bit more milk to get the texture you prefer.
  • Have fun with the toppings. Feel free to add anything else you like that goes well with the vanilla + cinnamon flavors – I love a swirl of vegan yogurt for a little tanginess, and nuts would add great texture.

Overnight oats are such a simple, go to staple breakfast for me, but they really never disappoint. I love changing up the flavors and this cinnamon roll version is one of my all time favorites.

Vegan Cinnamon Roll Overnight Oats

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1 pitted medjool date, chopped into small pieces
  • 1 tsp vanilla extract
  • 3/4 cup nondairy milk – I use unsweetened oat milk for the best creamy texture, but any nondairy milk works

Instructions
 

  • Mix the oats, ground flaxseed, and cinnamon in a bowl.
  • Add the chopped date, vanilla extract and oat milk and stir to combine.
  • Set in the fridge for at least 2 hours, or overnight.
  • When you're ready to eat, mix the oats and add a bit more milk depending on the texture you want. Add any toppings you like and enjoy!
