Vegan cookies and cream oatmeal is a super fun way to start the day! These oats are full of the classic chocolate sandwich cookie flavor, but made with just a few healthy ingredients.

Vegan Cookies and Cream Oatmeal

Way before I ever went vegan, before the concept of eating healthy, nourishing foods was ever remotely on my radar, I was an oreo OBSESSED kid. I’m not exaggerating even a little bit. Of course I loved the OG cookies, but also could not get enough of oreo cakesters or the oreo o’s cereal.

While I’m obviously no longer eating those, I do still LOVE the cookies + cream flavor combination. Clearly there’s the nostalgia factor there for me, but it’s also just a seriously perfect flavor pairing that I’m determined to make work in as many healthy recipes as I can. These mini cheesecakes are one of my favorite recipes I’ve ever shared on the blog!

Today, we’re making vegan cookies and cream oatmeal, and we’re using a super special key ingredient that seriously takes any cookies + cream recipe to the next level. Jet black cocoa powder is an essential for these oats, if you want optimal oreo vibes – and I don’t know about you, but that’s all I ever want.

  • Rolled oats: I love using old-fashioned rolled oats for great texture and chew + healthy whole grains and fiber.
  • Ground flaxseed: ground flax provides a lot of nutrition, including omega-3s. It helps to give the oats a nice thick texture.
  • Jet black cocoa powder: I typically use cacao powder, but for this recipe you’ll need a black cocoa for that classic oreo flavor. This is the one I used.
  • Vanilla extract: a little vanilla adds the “cream” vibe to the cookies and cream oatmeal.
  • Unsweetened vegan yogurt: I like a little yogurt on top for tang, it’s extra good if you mix in a little more vanilla extract to contrast the rich chocolate flavor.
  • Optional sweetener of your choice: I don’t add sweetener but if you have an extra sweet tooth you may want to use a little granulated coconut sugar or stevia, maple syrup, liquid stevia drops, or fruit on top.

tips for making vegan cookies and cream oatmeal

  • Add some protein powder to make it even more filling. If you’re eating these post-workout or just looking for a little extra protein, mixing in some protein powder along with the oats + flaxseed + cocoa powder will give it an even thicker texture. I always use Complement protein (code sweetvegansara will get you a discount!) which is totally unflavored, so keep in mind that whatever you use may affect the taste if it isn’t neutral. Also, you’ll need a little more water to get the texture you like.
  • Add a little extra sweetness however you like. I personally don’t add sweetener because whenever I eat cocoa my brain sort of thinks it’s sweet and with the added vanilla it’s enough for me, plus I almost always add some fruit to my oats. You could stir in a little coconut sugar or granulated stevia, to your taste.

Vegan Cookies and Cream Oatmeal

Ingredients
  

  • 1/2 cup rolled oats
  • 3/4 cup water
  • 1 tbsp ground flaxseed
  • 1 tbsp jet black cocoa powder
  • 1 tsp vanilla extract
  • 1 tbsp unsweetened vegan yogurt – my favorite is Kite Hill

Instructions
 

  • Add the oats + water to a large bowl and microwave for 2 min, then let cool completely.
  • Mix in the flax, cocoa powder, and vanilla, and stir everything is incorporated. You made need to add a little water to get everything to mix together completely, I like my oats super thick so I add just a splash as needed. If you're adding a granulated sweetener, mix that in too.
  • Top the oats with the vegan yogurt (mix that with a little more vanilla if you want extra "cream" flavor).
