So with September just a few days away, I figure there’s no better time than now to get going with fall flavors! Starting with apple + cinnamon, a super cozy combo we all know and love this time of year.

This vegan single serve apple cinnamon baked oatmeal is the best breakfast for any fall morning. The texture of the baked oatmeal is thick and rich, the apples are soft and sweet, and of course the cinnamon brings all the amazing spice flavor. It’s super simple to make with just 7 healthy ingredients!

Ingredients for vegan single serve apple cinnamon baked oatmeal

  • Rolled oats: I used old fashioned rolled oats because they have great chewy texture.
  • Ground flaxseed: flax provides super healthy omega-3 fats and helps hold this oatmeal together.
  • Date sugar: date sugar gives the baked oatmeal natural sweetness from fruit. I have only tried this recipe with date sugar, but stevia or coconut sugar should also work.
  • Cinnamon: because we all know apple + cinnamon is a dreamy combination.
  • Vanilla extract: vanilla is a great complement to the apple + cinnamon flavors.
  • Chopped apple: because we need apples for apple cinnamon baked oats! I use about a quarter of an apple.
  • Nondairy milk: you’ll use a bit of milk to bring the oatmeal batter together before it goes into the oven. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.

Tips for making vegan single serve apple cinnamon baked oatmeal

  • Chop the apple into small pieces. You want the apples to soften a bit when baking, so be sure to chop it into very small pieces.
  • Be sure to use an oven-safe dish. Because this is a single serve portion, make sure that whatever smaller dish you use is safe for the oven.
  • Customize with your favorite toppings. This baked oatmeal is great on its own, but even better with some fun toppings for more flavor and texture. I love a drizzle of vegan yogurt or nut butter, and some chopped nuts would add great texture, too! Use whatever you like.

Vegan Single Serve Apple Cinnamon Baked Oatmeal

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp ground flaxseed
  • 1 tsp date sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup finely chopped apple – I leave the skin on but feel free to remove it if you don't like the texture
  • 1/2 cup nondairy milk – I used unsweetened almond milk

Instructions
 

  • Preheat the oven to 350 degrees.
  • In an oven safe bowl, mix the oats, flax, date sugar, and cinnamon.
  • Add the chopped apple, vanilla extract and nondairy and mix until everything is incorporated.
  • Bake the oats for 20 minutes.
  • Once they've cooled, top with whatever you like and enjoy.

  1. This was the perfect warm and cozy breakfast today! It’s rainy and gray here and this was so good! I love a breakfast that tastes like it could be dessert but is so healthy!
