Vegan single serve pineapple banana baked oatmeal is so dense, rich, and satisfying. The tropical, fruity vibes are just perfect for summertime. Plus, you get the whole bowl to yourself!

Normally I’m a room temp oats kinda girl, but every now and then I want something a little more fancy, so I bake some. I never regret it, they always come out so warm and toasty, and the combo of chewy oats + warm, sweet fruit is seriously SO amazing.

  • Rolled oats: I always use old fashioned rolled oats because I they have the best chewy, hearty texture.
  • Ground flaxseed: flax provides healthy omega-3 fats and helps to thicken the oats.
  • Banana: make sure the banana is super ripe for the most flavor and sweetness.
  • Nondairy milk: some nondairy milk brings the oat mixture together before baking. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.
  • Frozen pineapple: frozen pineapple is a super fun, tropical pair with the banana.

  • Use an oven-safe dish. Make sure to check that whatever dish you’re using is safe to go in the oven.
  • Add any other toppings you like. Feel free to add other toppings, coconut or some vegan yogurt would be great with this mix!

Vegan Single Serve Pineapple Banana Baked Oatmeal

Ingredients
  

  • 1/2 cup whole grain rolled oats
  • 1 tbsp ground flaxseed
  • 1/2 cup mashed ripe banana
  • 1/2 cup nondairy milk – I used unsweetened almond milk
  • 1/2 cup frozen pineapple

Instructions
 

  • Preheat the oven to 350 degrees.
  • In an oven safe bowl, mix the oats and ground flax.
  • Add the mashed banana and nondairy milk and mix until everything is incorporated.
  • Mix in the pineapple, pour the oats into an oven safe bowl and bake for 20 minutes.
  • Once they've cooled, add any additional toppings you'd like and enjoy!
