Happy Monday! I’m thinking we should celebrate the last couple days of June with some sweet, summery, vegan strawberry banana overnight oats. Super simple (per usual), made with just a few healthy ingredients, and extra satisfying this time of year.

The strawberry + banana combo just never disappoints. Such a good mix, and what better way to highlight the pair than with some super rich and creamy overnight oats?

Ingredients for vegan strawberry banana overnight oats

  • Rolled oats: I always use old-fashioned, whole grain rolled oats because they have the best texture and chew.
  • Ground flaxseed: ground flax provides a lot of nutrition, including omega-3s. It helps to give the oats a nice thick texture.
  • Freeze dried strawberries: you’ll blend the freeze dried strawberries into a powder and mix into the oats, which gives a really strong, sweet strawberry flavor.
  • Nondairy milk: you’ll soak the oat mixture in some nondairy milk overnight (or for a few hours). I like unsweetened almond milk for neutral flavor, but any nondairy milk works.
  • Banana: top with plenty of ripe and sweet banana slices for a super summery bowl.

Tips for making vegan strawberry banana overnight oats

  • Add a splash of milk before serving to get a texture you like. I typically don’t add more liquid at this stage because I like my oats VERY thick, but feel free to add a bit more milk to get the texture you prefer.
  • Have fun with the toppings. In addition to the banana, feel free to add any other toppings you like on oats! A drizzle of unsweetened vegan yogurt or nut butter would be great, too.

Vegan Strawberry Banana Overnight Oats

Ingredients
  

  • 1/2 cup whole grain rolled oats
  • 1 tbsp ground flaxseed
  • 1/4 cup freeze dried strawberries, blended into powder (this is optional but highly recommended, it adds so much great strawberry flavor!)
  • 1 super ripe banana, mashed
  • 1/2 cup nondairy milk – I use unsweetened almond milk
  • Sliced fresh or frozen strawberries for on top

Instructions
 

  • Mix the oats, ground flaxseed, and freeze dried strawberries in a bowl.
  • Add the mashed banana and nondairy milk and stir to combine.
  • Set in the fridge for at least 2 hours, or overnight.
  • When you're ready to eat, mix the oats and add a bit more milk depending on the texture you want, then top with sliced strawberries.
