Now that we’re well into September, I feel great about bringing you all the apple + pumpkin things from now until Thanksgiving. Hope you’re ready for it!

Since Joe and I started dating (back in 2012!), we’ve gone apple picking every single fall. Usually we wait until October, for no reason other than it really feels like fall is rolling by then. But this year, both of us are so excited to take Axel that we’re going at the end of September and I cannot wait.

There’s nothing better than driving home with a trunk full of pounds and pounds of perfectly sweet + crisp local apples, and the first thing on my list to make with a few will be these vegan baked apples.

These are so easy but seriously the best comforting, cozy treat at the end of any fall day. The soft, sweet apple is of course delish but nothing beats adding that chewy, sweet and spiced filling in the center! Aside from the step that involves cutting and removing the core, they’re great for making and enjoying with your little ones.

Ingredients for vegan baked apples

  • Apples: of course, we need apples! My favorites are anything extra sweet like pink lady or fuji, but use whatever apple you like.
  • Rolled oats: rolled oats are the main ingredient for the sweet filling, and they provide healthy whole grains and the best chewy texture.
  • Dates: pitted medjool dates give the filling incredible natural sweetness and help it stick together.
  • Cinnamon: because cinnamon + apple are fall best friends, of course.

Tips for making vegan baked apples

  • Be careful when hollowing out the apples. To fill the apples, you’ll cut out the center. I found the easiest way was to cut vertically in a circle from the top around the core, then carefully cutting at a slight angle to pull out the core and cut a bit more in a circle so there was room for the filling. This isn’t a fun or easy process, but I promise it’s worth it, and it doesn’t have to be perfect at all! You just want a space for the filling to go inside. Be super careful with your knife for this step!
  • Line your baking sheet for easy clean-up. I used a standard baking sheet and lined it with parchment paper, the apples may ooze a bit when baking and lining makes for super easy cleaning.

Vegan Baked Apples

Ingredients
  

  • 2 large apples
  • 1/4 cup date paste – 4 medjool dates blended with 1/4 cup hot water
  • 1/2 cup rolled oats
  • 1 tbsp cinnamon

Instructions
 

  • Preheat the oven to 350 degrees.
  • Cut the apples straight across the top, then carefully cut down in a circular motion to remove the core and seeds so that there's a large hollow space in each one.
  • In a small bowl mix the oats, date paste and cinnamon, then spoon an equal amount of the filling into each apple.
  • Place the apples on a parchment-lined baking sheet and bake for 30 minutes, or to your desired tenderness – feel free to add a bit more time if you'd like them softer, or subtract time if the apples aren't very big.
  • Let the apples cool for 15 minutes after baking and enjoy!
